This is Caryota urens, also known as solitary fishtail palm, toddy palm, wine palm, and jaggery palm. Many people grow this as an ornamental, but it is very versatile and had several other uses. Sugar, candy, and alcohol are made from the sap of this plant. The juice from the flowers is used as a substitute for sugar as well. The stems can be used to obtain starch which is made into sago. Young leaves and leaf buds can be cooked and served as vegetables. People eat the heart of this palm and they also boil the pith and cook it with rice. A strong versatile fiber is taken from the leaves and used in many applications. The wood from this plant is used to build traditional buildings.
